According to The Australian Financial Review, Japanese dining is back with a vengeance and it's quite possibly better than you imagined.
"Japanese philosophy of food and eating is overflowing with attention to detail, seasonality, simplicity and unadulterated flavour. I believe that more diners are searching for honest, sustainable and healthy foods and Japanese cuisine provides an excellent vessel to carry these values," says Joey Ingram, of Fujisaki in Barangaroo.
In a nod to the rising popularity of Japanese dining, 29 of this year's Top 500 restaurants are Japanese or Japanese-inspired, while 12 newcomers.
